Aburi-EN at Vivocity spots a rustic looking design with open kitchen concept, allowing diners to view all the fiery actions at the grill. YumzYumz tried out Aburi-En’s Kyushu Tonkotsu Ramen and this is our food review of it.
Tonkotsu means “pork bone-broth” in Japanese, and naming it Kyushu probably means this is a Kyushu styled broth? Regardless it came from Hokkaido or Honshu or Kyushu or even Jurong, Aburi-EN’s Tonkotsu Ramen’s broth was thick, creamy, white in color and densely packed flavour. It wasn’t overtly salty, but rather amazingly satisfying.
The Japanese seaweed, or hijiki (we think it is called hijiki…), gave the already chewy ramen noodles an extra texture and bite. The standard huge piece of nori seaweed gives the bowl a nice aesthetic, and an added side dish.
The thick and EXTREMELY tender cha chu (or char siew? ^^) was so soft, it crumbled when picked up by our chopsticks. It’s flavour was subtle, compared to the heavy handed broth but still delicious.
The final item was the okinawa egg, or molten egg or lava egg, had a subtle soy sauce exterior and a creamy flowing egg yolk.
At $14 a bowl, Aburi-EN’s tasty pork broth ramen was generous in size, tasty in every aspect, but as what every kiasu Singaporeans, we thought it might be nice to have ONE more piece of melt in your mouth chashu. LOL
